  • 2 orange, juiced
  • 1 1/2 tbsp coconut oil
  • 1 1/2 tbsp maple syrup
  • pinch of salt
  • 2 cinnamon sticks
  • 1/2 ground cinnamon
  • orange peel cut into thin strips

  • 1/2 cup coconut yogurt – optional
  • 1/2 cup granola of your choice – optional
  • 1/2 hazelnuts chopped (roast in the oven)

  • In a bowl, mix together the milk, chia seeds and vanilla. Whisk once every minute for the first 5 mins to prevent any clumps. Then stir twice more at 5 min intervals before leaving to thicken.
  • Melt the coconut oil in a pan over a medium-low heat. Add the apples, orange strips, orange juice, cinnamon sticks, ground cinnamon and maple syrup. Cook for about 5 mins, stirring until the apples are golden and warm but still have a little bite.
  • Divide the chia-oat pudding evenly between four jars. Top with 2 tablespoons of granola,1/4 of the caramelised apples, coconut yogurt (if using it) and garnish your delicious pudding with roasted hazelnuts.
  • Drizzle with a touch more maple syrup and a sprinkle of granola if desired!
