Grab a spoon and dive into a cup of this cinnamon apple pie chia pudding! It tastes just like apple pie! This recipe is naturally vegan and gluten-free and a healthy option to have for breakfast, dessert or even as a snack. Just a great fall treat that everyone will enjoy!
Ingredients
- 350 ml oat or almond milk
- 4 tbsp chia seeds
- 1/2 tsp vanilla extract
For the apple crunch
- 2 apples or pears, peaches, chopped
- 2 orange, juiced
- 1 1/2 tbsp coconut oil
- 1 1/2 tbsp maple syrup
- pinch of salt
- 2 cinnamon sticks
- 1/2 ground cinnamon
- orange peel cut into thin strips
Toppings:
- 1/2 cup coconut yogurt – optional
- 1/2 cup granola of your choice – optional
- 1/2 hazelnuts chopped (roast in the oven)
Instructions
- In a bowl, mix together the milk, chia seeds and vanilla. Whisk once every minute for the first 5 mins to prevent any clumps. Then stir twice more at 5 min intervals before leaving to thicken.
- Melt the coconut oil in a pan over a medium-low heat. Add the apples, orange strips, orange juice, cinnamon sticks, ground cinnamon and maple syrup. Cook for about 5 mins, stirring until the apples are golden and warm but still have a little bite.

Divide the chia-oat pudding evenly between four jars. Top with 2 tablespoons of granola,1/4 of the caramelised apples, coconut yogurt (if using it) and garnish your delicious pudding with roasted hazelnuts.
